"I don't want to feel rushed. I need two hours in the morning," he says. "Sure, I could do it all in 45 minutes. But I choose not to."

He wakes naturally - no alarm, no urgency. The first thing he does is step outside to pick up freshly baked rolls from Berta, his local bakery.
