Mornings Matter
“I just want to wake up and feel good. That’s honestly the goal.”
“I don’t want to feel rushed. I need two hours in the morning. Sure, I could do it all in 45 minutes - but I choose not to.”

“I just want to wake up and feel good. That’s honestly the goal.”
They say your home says a lot about who you are. If that’s true, then this space speaks volumes. On the top floor of a quiet building in Aarhus, with sloping ceilings, a wide open kitchen, books stacked to the brim, and a smiley-faced lamp glowing softly in the corner, lives professional cyclist and podcast host, Mathias Norsgaard. And yes, there’s an entire room dedicated to his bikes.
But the most important space in Mathias’ life isn’t physical - it’s his morning. He wakes naturally - no alarm, no urgency. The first thing he does is step outside to pick up freshly baked rolls from Berta, his local bakery. It’s not just about the food - it’s about starting the day with light and movement. Back home, he boils eggs, drinks lots of water, and makes coffee - but only after an hour has passed. It’s all part of a rhythm he’s shaped over time. He might read a magazine or a book - Euroman, Søren Stiller’s writing on coffee, or even something heavier, like a piece by Anders Fogh Rasmussen. The mood should be calm, curious. A quiet way to spark the day.
“aioss has really helped stabilize my digestion. It gives me a base - all the essentials in one mix - and I feel the difference.”
That philosophy carries through everything: from his bike room to the way he structures his mornings. He thrives on structure, but never lets it become rigid. Calm and harmony are core values. Over the years, Mathias has developed a deep interest in health - especially how small daily decisions affect energy, mood, and longevity. He used to struggle with stomach issues, especially during high training periods. That’s when he started incorporating aioss into his morning routine - and for him, it’s been a game changer.
He adds aioss to his breakfast alongside chia pudding and a spoonful of pure, unprocessed cocoa powder - the same kind longevity pioneer Bryan Johnson swears by, chosen specifically for its cognitive and anti-inflammatory benefits, and for being free from heavy metals.
He limits himself to two cups of coffee a day - any more affects his sleep, and sleep, to him, is sacred. “A good morning starts the night before,” he says with a smile. He’s read the sleep books, experimented with what works for his body, and has learned to listen. His routine is not about control - but care.
Sitting in his warm, quiet kitchen, the whole space feels like an extension of that mindset - intentional, calm, and quietly energizing. It’s not about perfection. It’s about feeling in sync. And for Mathias, that feeling starts every morning - slowly, simply, and on his own terms.
1. Create systems that support you - not stress you.
2. Start with light, movement, and nourishment.
3. Protect your sleep by respecting your mornings.
